De Buyer, has been contracted by the Valrhona chocolate school of Japan to design and manufacture the perforated rings which allow them to make their best chocolate desserts.
Many low-cost rings in the market are made of thin stainless steel, which often causes the rings to crack and lose their shapes. However, de Buyer rings are reinforced with a thick layer of stainless steel so that they can endure the heat pressure in the oven. Indeed, under intense heat the rings go through a process of thermal expansion and contraction which can damage non- reinforced rings over time. Thus, the thick layer of stainless steel greatly improves the life span of your product.
The Valrhona perforated rings are flexible and easy to demold and the holes conduct the heat faster and evenly, which helps to make your crusts golden and crunchy. The thickness of the series ranges from 0.8 to 1 cm and the size can be find marked inside the rings.
