REVOLUTIONARY FOAM SILICONE + IRON POWDER MOULDS (DE BUYER PATENT)

 
ELASTOMOULE is a DE BUYER pastry innovation and patent.  A revolution in terms of baking exceptional results compared to other traditional silicon molds:
  1. Made of platinum Silicone Foam, not silicon. Silicone foam is far more aerated than silicone alone thanks to multi micro-perforations. Elastomoule allows therefore the humidity to evaporate better and evenly on sides and bottom for an even cooking of the whole pastry
  2. The inner layer of silicone foam is mixed with metal powder for far better heating diffusion and browning results: iron is a top heat and cold distributor material. The browning and caramelization of your pastry will be optimized and not only occur on the top, like with other traditional silicone molds, but on sides and bottom of your pastry too. 
  3.  Elastomoule molds can be used for freezing down to -70°C and oven baking up 300°C vs [-40°C / 260°C] generally for other high quality silicone molds. You will probably never use such temperatures to freeze or bake, but they represent a guarantee of high resistance, long lifetime molds even with heavy professional usage and safety (no bisphenol, no peroxide, no particles migration).

Cooking tips: for an even better performance, use Elastomoule on a grate or a perforated baking tray. Even though nonstick, it is recommended to grease the mold with cooking oil or butter before baking.

Care & Wash:

  • Wash the mold with warm water before the first use
  • Do not heat the empty tray and empty mold slot. If there is an empty slot, you can fill it with flour.
  • Do not use any sharp tools to maintain its service life.
  • Do not use in Microwave (contains iron powder)
  • Dishwasher safe but we recommend to wash it by hand for a longer lifetime

The origin story of the Canelé


The Canelé, called as well "Bordelais" in France, is a French dessert from Bordeaux created by the nuns of the city's monastery. At the time  such large amounts of flour were traded in Bordeaux, that the locals would give their leftover to the nuns. The second ingredient was provided by the very famous traditional winemakers of the city, who would use egg-white in abundance to soak in their oak barrels in order to clean the impurities of the wine. Because the egg-yolk was of no use to them, they would donate it to the monastery. Thus the nuns were using those two ingredients to make the early Canelé. Needless to say that the Canelé's recipe has become more and more sophisticated over time to result in the widely  appreciated French dessert that it is today.
